At Hay Springs Yaks we raise our yaks tucked in the corner of beautiful northwest Nebraska. Our animals are pasture-raised and pasture-finished (no feed lots) and are grass-fed during the spring, summer and fall. In the winter months, they are fed organic grass-alfalfa hay. We care about the well-being of our yaks and are committed to humane treatment of our animals. Our USDA yak meat is all-natural without contaminants: No growth hormones, additives or fed antibiotics.
Yak meat is low in fats, cholesterol, triglycerides, calories, and is high in Omega 3 oils and poly-unsaturated fats. In spite of being 95%–97% lean, yak tastes juicier, sweeter, and more delicate than either venison or bison, largely because of the high percentage of omega 3 oils. Since yaks are acclimated to the mountainous regions of Tibet, the fat is not marbleized like it is in beef – instead the fat forms a layer around the meat, just under the skin.
Available products and cuts include: ground, stew, roasts, steaks, soup bones, sausage, and jerky. Eighths, quarters, halves, and wholes are available if pre-ordered. Depending on the size of the yak butchered, a quarter will yield approximately 60–100 pounds of meat. We deliver once a month to Ogallala and Rapid City and are willing to deliver in the Nebraska panhandle with a minimum purchase of 50 pounds of meat. If, however, you are ordering yak meat for the first time, the minimum purchase is 25 pounds. You are also welcome to visit and pick up orders at our ranch at 7170 Highway 20, Chadron, Nebraska.
