Meadowlark Hearth Organic Farm offers whole, half, and quarter beef for purchase. Cows go to butcher beginning in June and ending in December; our butchers are located in western Nebraska and Fort Collins. A 3-week dry-aging process enhances the beef's exquisite flavor and tenderness. The butcher custom cuts and packages your order for fresh, responsibly-raised, high-quality beef all year.
Meadowlark Hearth cattle build a whole-farm system. The nutritious beef begins with integrated farm parts: organic vegetable production, open-pollinated seed, pasture-building and haymaking. Calves are born on western Nebraska prairie, heifers become grass-fed dairy cows and steers graze grasses, vegetable crop leftovers and hay from our farm. In the end, they provide nourishing food for families and valuable compost for fields. The cycle of health for our animals creates a cycle of health in those who eat the food that this special land produces.
Meadowlark Hearth cattle never receive grain, antibiotics, hormones or vaccines. In providing forage and fodder that their stomachs can handle, we see the cows flourish. This meat is real, natural, and wholesome.
